Sexy Stir Fry

In addition to being a vocal coach I'm a (sometimes) working actress who is currently working, playing Maria in a production of The Sound of Music.  It's a dream role and a I'm having a blast but long days and late nights mean that I'm missing dinner and my hubby is eating eggs...a lot.  Seriously, last night he confessed to eating eggs and toast 5 days in a row.  Taking pity on him, after he begged *wink*, I decided to make extra food for lunch so he'll have leftovers.  I realize this thought probably occurred to you veteran wives but I'm a neophyte, I'm learning.  

In my quest for a healthy, sexy body inside and out (and my love for food that is absolutely delish) I made this Sexy Stir Fry which is completely vegan and completely ah-mazing.  

Sexy Stir Fry
Serves 2 
(Add more of everything for your friends..kids..groupies)


Ingredients
1 TBSP Cold Pressed Coconut Oil *The Super Sexy Ingredient strikes again*
1-2 Cloves of Garlic Minced 
2 Cups Each of Chopped: Zuccini..Onion..Mushrooms..Bok Choy *Feel FREE to add your own favorites*
2 Cup Pea Pods *I trim the ends and pull off the stringy part*

Brown Rice - follow package directions..I like to use 1/2 water and 1/2 vegetable broth when making mine 






Heat Coconut Oil til Liquid 

Chop Veggies..De-String Peas

Sautee Onions and Garlic until Onions are Clear 3-4 Minutes

Add Veggies! 

Stir Til Cooked - The Pea Pods will get SUPER Bright Green & the Mushroom will Shrink! 7-8 Min.

Serve Over Rice - Enjoy!

The "My Husband Thinks It's Sexy" Smoothie

October has been a rough month.  No, it's been worse than that.  October has been a bitch: a big, fat, bitch of a month.  My horoscope totally predicted this.  Laugh if you must, but I have to say that Susan Miller hit the nail right on its big, ugly head this month.  My husband and I got in a huge fight, one of our first since tying the knot, family members became sick unexpectedly, and most recently the father of one of my students died much, much too early.  A central theme of all this chaos (other than the fight which was over something so inconsequential) was health.  I'm approaching the big 3-0 in a few months and that combined with all the illness around me has gotten me thinking about the importance of a healthy body, and what I put in my body has such a massive part in that.  If we are what we eat..I want to be sexy, but more importantly I want to be healthy.  

I am a huge proponent of a plant based diet.  And by that I mean I've bought all the top vegan diet/cookbooks, read (most) of them, and been trying for the last 3 weeks to be at least a 5 day vegan.  Last week I made it to Friday night before my husband surprised me with date night to our favorite place, with THE BEST Moroccan spiced ribs.  I caved.  However, on my quest for health I have been starting the day off with this ah-mazing smoothie.  It's delish.  Seriously.  My husband even asked if it was made with Oreos.  No joke.  



The "My Husband Thinks It's Sexy" Smoothie 
Serves 1
 (double for your husband/wife/pool boy)

Ingredients

1 Cup Unsweetened Almond Milk

1 Scoop Chocolate Protein Powder *I used Jay Robb's Whey Protein powder because it's delish and has 0g of sugar but use your fav*

1 Handful Raw Spinach *this is a GREAT way to get raw spinach into your diet when you are sick of eating salads, add as much as you want but I use a large handful* 

1 Cup Frozen Blueberries 

1 Banana Cut Into Chunks
